Evidence:
In our SPARC* facilities we`ve performed trials using pork lard as substitution of pork backfat. Fully replacing pork backfat with lard provides a significant better yield in a cold cut product compared to using backfat only. It also results in more texture in the raw meat dough. This can be beneficial if availability of back fat or other fatty trimmings is scare.
