If a high-quality meat product is what you want to develop and sell successfully, then chances are you don’t want to include anything beyond 100% meat, right? We understand: quality is of the utmost importance.
That said, Sonac has a new product, made using a patented process, that can improve the quality of your beef or pork product. Called QExtend, Sonac offers two varieties—QExtend Beef PF12 and QExtend Pork PF12—and when they are added to a beef or pork product (versus when they’re omitted), there are a few key differences in the end product.
Here we outline those differences so that you can better understand the benefits of including QExtend in your meat recipe:
Using qextend gives you a juicier end product
When you add QExtend, the meat gets a smooth bite thanks to the natural characteristics of QExtend, juiciness is increased and your cooked end product has a better bite compared to most reference recipes.
Replacing beef or pork with qextend is healthier
Your end product is healthier because you’ve lowered the fat content of your beef or pork product in replacing some raw meat with QExtend. (There’s no fat in QExtend, while there is fat in raw, frozen beef or pork.) That swap decreases calories, too. QExtend is also a great replacement for meat trimmings, which are a fattier meat ingredient and so making this swap could decrease fat content even more.
The consumer has a better eating experience
Take, for example, a fast-food chain hamburger that is 100% beef. Often it is quite flat in its shape, the structure is stiff, and the bite is firm, even hard. The burger may be dry. This is a meat product without QExtend. Now, compare that type of hamburger to one made at home: the structure is looser, the bite is juicier, and not as dense or dry. This at-home example is comparable to a meat product made with QExtend added. Including QExtend in your recipe improves the mouthfeel and the beef or pork product becomes juicier so the overall eating quality increases.
How to use qextend in your beef product or pork product
QExtend Pork PF12 and QExtend Beef PF12 come in frozen blocks and in the same format and appearance as regular, frozen beef and pork meat that you’d use in an all-meat formulation.
It’s a solid consistency, which allows for a 1:1 replacement of meat, so you can handle QExtend how you handle raw beef and pork meat.
